Tomatoes are the wonder vegetable (although they’re technically fruits). One medium tomato has half the recommended daily allowance of vitamin C and about 20 percent of the R.D.A.s of vitamin A and fiber, all at a mere 35 calories. But even more important, tomatoes contain lycopene, a powerful antioxidant that appears to reduce the risk of prostate, digestive tract and breast cancers. It also lower the incidence of cardio-vascular disease.
